DOMAINE DE LA PÉPIERE, Château Thébaud, 2012

The plots of Melon de Bourgogne used to make this Château-Thébaud are located on hillsides overlooking the Maine River.
The grapes are harvested by hand and the fermentation is natural. A long ageing period of 30 months on the lees will allow the aromatic complexity and the roundness of the wine to develop.
On tasting, it expresses itself with finesse, with fresh and spicy notes, liquorice aromas and a saline finish. The wine will keep for at least 15 years in a cellar in good conditions of conservation.
